Cajuns Choice Louisiana Foods Gumbo File 40g
The Choctaw Indians of the Louisiana bayous were probably the first to use filé seasoning made from dried, ground leaves of the sassafras tree.
Later Africans introduced gumbo (meaning okra) to this region in the rich roux-based stew over rice.
When okra wasn't available, filé powder was adapted to the recipe for thickening as well as its aromatic, woodsy flavour.
Truly "born on the bayou", filé has since become a signature flavour in Cajun cooking, adding authentic Louisiana character to mouth-watering gumbos and your own favourite dishes.
